Headwall Photonics (Bolton MA) and Laitram Machinery (New Orleans LA) announced on 29 April 2025 a partnership to deploy hyperspectral imaging + AI in NA food processing. The initial use case named in the partnership announcement: shrimp processing, with explicit expansion scope to poultry, fruits, vegetables, nuts, and pet foods.
What hyperspectral + AI does for shrimp processing:
